Easy & Quick Meals

If you’ve been following along for a while now you’ll know that bowl recipes are one of my favorite things to have during busy weeks. I don’t enjoy spending 2+ hours every day in the kitchen so I try to prep on Sunday for the week by preparing the things that take up a lot of time (rice, quinoa, grilled veggies, proteins).
This week we were craving Mexican! So I prepped all the ground beef and Mexican rice so that we can customize our bowls to our liking. The combo I went with was Mexican rice, spinach, ground beef, and topped it with avocado slices. Sharing this bowl combination because if you hate spinach this is the perfect way to sneak in those greens. With the ground beef on top of the spinach, it soaks up all the delicious beef flavor and it’s incredibly satisfying. Not to mention healthy!

Ingredients

GROUND BEEF
Wagyu Ground Beef
1 Green Bell Peppers Chopped
1 Red Bell Pepper Chopped
1 White Onion Chopped
1 Green Scallion Chopped
2 tsp of Tomato Paste
1 tbsp of Cumin
1 tbsp of Chile Powder
1 tbsp of Garlic Powder
Salt & Pepper
MEXICAN RICE
1 Cup White rice
1 tbsp Tomato paste
1 tbsp Chile powder
1 tsp Cumin
1 Garlic Clove minced
1 tbsp Olive Oil
Salt & Pepper
BOWL PREP
Spinach
Avocado Sliced
Directions
Begin by preparing your Mexican rice in a medium pot over high heat. Add olive oil and 1 cup of white rice. Mix until the olive oil is fully incorporated and the rice looks transparent. Then, add your tomato paste, chile powder, cumin, minced garlic, salt, and pepper. Mix until fully incorporated. Then, add 2 cups of water and allow it to boil for 2-3 minutes. Put on low heat and cover it. Rice should be ready in 30-40 minutes.
Next, prepare your ground beef. In a large pan over medium heat add your ground beef and allow it to cook until medium-well. Then, add all of your chopped bell peppers, onion, scallions, tomato paste, and spices (chile powder, cumin, garlic). Mix until fully incorporated. Add salt & pepper to taste.
Once your Mexican rice and ground beef are fully cooked you are set! Add the rice as your first layer to your bowl. Then, add your spinach and top with your ground beef. Top your bowl with some sliced avocado and sprinkle with salt.
