Do you ever get to the end of the week with some of the most random ingredients left from grocery shopping? It's a bittersweet moment. Bitter because you're left thinking, "what in the world am I going to make with this!" Sweet because I've created some of the most delicious & creative dishes from minimal ingredients. Kinda makes me feel like I'm on an episode of Top Chef!
Mushroom Chicken Tacos were a result of the end of the week left over ingredients. To my surprise I actually really enjoyed this dish. It was a perfect combination of veggies, grain, and protein all wrapped up in a little tacito!
How to Make
Add your okra slices in a pan, over medium-high heat, with olive oil. Sauté until it get golden & crispy. Add mushroom into the same pan & lower the heat to low-medium heat.
Heat up your corn tortillas. As well as your prepped wild rice & chicken (I had wild rice & honey chicken left over from the week).
Prep your taco's with wild rice first, chicken slices, mushrooms & okra.
